Simple, no heat, picnic recipes 

It's officially picnic season. Check out these recipes to make your meal fun without breaking the bank or your appetite.

Summer is just around the corner, and what better way to celebrate than with friends and food.

Here are three easy recipes on how to make your picnic, well, a picnic!

  1. Cucumber Pinwheel Sandwiches:  You’ll need:
  • 1 whole cucumber
  • 1 pack of tortillas
  • Low fat cream cheese
  • 1 lemon for flavor
  • 1 knife

 

Directions:

Wash off cucumber and cut into think long pieces. Set aside to dry.

Spread cream cheese on tortilla.

Lay cucumber pieces on top of tortilla.

Squeeze lemon juice on tortilla for optional flavor kick.

Roll up tortilla and use cream cheese to seal last bit of tortilla flap.

Cut up roll diagonally into desired number of pieces and serve to you or your guest.

Enjoy!

    2. Fruit Kabobs

You’ll need:

  • Cut up or small pieces of fruit
  •  Skewers

 

Directions:

Wash fruit and pat dry.

Stick fruit pieces on skewer in desired aesthetic pattern or presentation.

Enjoy!

3. Blueberry Mint Lemonade

You’ll need:

  • 2 cans of frozen lemonade
  •  1 cup blueberries
  •  Crushed mint leaves
  • Pitcher

 

Directions:

Mix lemonade into pitcher. Follow can directions.

Mix blueberries and mint into mixture and stir to let flavors mix.

Enjoy!
